BLACK GLUTINOUS RICE CHIFFON CAKE

I was so obsessed with chiffon cake that time. I often browse the recipe and watch the chiffon making video on youtube. Since I still have the black glutinous rice flour (the leftover from making steamed black glutinous rice cake), I decided to give it a go. Even though the first chiffon recipe  shown in this blog was cheesy chiffon cake, but I actually made this black chiffon several months earlier. Cheesy chiffon recipe was posted first cause I’m not in the mood of remembering the past *well, I know it’s unimportant*.

Please forgive me for my chitchat. There were so many recipes I found on google, but I choose a recipe from Dapur Vanilla (thanks mbak) because it was not mixed with wheat flour. Here is the recipe, I did some modifcations so it fit to 20 cm diameter chiffon pan.

Ingredients :
150 g black glutinous rice flour
4 egg whites
4 egg yolks
100 ml coconut milk
75 ml vegetable oil
150 g sugar
¼ tsp salt
½ tsp baking powder
½ tsp cinnamon powder

Steps :
  1. In a bowl, sift in flour. Add egg yolks, coconut milk, vegetable oil, salt, and baking powder, mix well.
  2. Make meringue: beat egg whites in a clean greass free bowl with low speed until froathy. Speed up gradually until the mixer reach its maximum speed. Slowly add in sugar if the soft peaks form. Continue beating until all the sugar dissolved and stiff peaks formed.
  3. Add in meringue to the egg yolk mixture in three batches. Fold gently until just combined before adding the next meringue batch.
  4. Pour the mixture to chiffon pan (ungreased)
  5. Bake in the preheated otang (oven tangkring) with medium heat for ± 50 minutes.
  6. Take the pan out from the oven, and turn the chiffon pan upside down. Let it cool completely in room temperature.
